I just wanted to say Thank You! to all the people that have been stopping by my blog and liking my posts and following me. I’m fairly new at this and it is encouraging to know that people actually read what I write and like it. Even more surprising to me is that people are following me, which means to me that some of you are looking forward to what I write next.
I was reading a cookbook looking for dinner inspiration when I came across some dessert recipes. While these recipes were definitely not Paleo-approved, it started me thinking that I could most likely make cookies with Paleo ingredients and with what I had on hand.
In my mind, the primary ingredient in any good cookie is butter and this cookie is no different (thank goodness it is on the Paleo list!). Now I needed some “flour”; I had almond flour and coconut flour, hmmm. I really like the taste of marzipan, so I was hoping that the almond flour would at least hint at that flavour. For the “sugar” I used maple syrup. A bit of vanilla for taste. An egg and some soaked flax seeds. Et voila! A very soft batter that needed refrigeration (or some time in the freezer). Yesterday around 4:30pm, just as I was about to cook our Paleo dinner, I got a phone call from some friends who asked us to go to the park and have dinner with them at the fish and chips place there. Our kids love to play together, so after a moments hesitation I said yes. I haven’t done a big grocery shop in a while, just some trips to the store in the past few days to grab the necessities: meat or veggies. So today my fridge was looking a little empty, except for the defrosting extra lean ground beef, courtesy of Hopcott Meats in Pitt Meadows, BC. I’m 11 days into my Paleo experiment and I have to say it is not as nearly difficult as I expected. Yes, I miss eating freshly baked sourdough bread and my chocolate chip oatmeal cookies but I can do without most everything else. It has really highlighted for me how dependent I was on convenience foods like cereal and muffins even though they were the healthier options or homemade with little sugar. I’ve been thinking a lot lately about what healthy means to me. Originally when I started this blog in 2011 it was about physical health but more and more I am coming to realize that mental health is equally important. I knew this already – I used to do Ki training which trains your mind-body connection – but forgot about the impact mental health can have on your physical health (thank you, LL, for reminding me) and vise versa.
