Mmm, pancakes. I love Saturday morning pancakes or waffles. But the Paleo lifestyle sort of threw a wrench in the weekend breakfast plan. Solution: almond flour or coconut flour pancake. A quick Google search turns up a number of recipes but here is my take on Paleo pancakes (who knows if our hunter-gatherer ancestors ate something like this but I like to think pancakes or flat ‘breads’ are universal).
