Recipe: Snack Spheres

We’re about to take a road trip and I needed to have some snacks on hand that are easy to eat on the go, besides my usual apple and handful of nuts.  So here’s what I ended up with. Snack Spheres.  Ok, not the greatest name – naming recipes is obviously not my thing!  Inspired by the Rebar cook book.

Makes about 15 balls, approximately 1″ in diameter.

Ingredients:

  • 1 c. dates, chopped
  • 1/2 c. water
  • 1/2 c. flax seeds
  • 1/2 c. sunflower seeds, unsalted
  • 1/2 c. almond flour
  • 1/2 c. pecans, chopped
  • ~1/4 c. sesame seeds

Combine dates and water in a saucepan over low heat.  Stir until dates get a bit mushy and sticky.  Remove from heat.  Finely grind flax and sunflower in food processor (or Magic Bullet, whatever is handy).  Combine dates, flax and sunflower meal with remaining ingredients and stir until well mixed.  If your mixture is too moist, add more almond flour.  Oil your hands so the mixture doesn’t stick.  Roll into 1″ diameter balls, then roll in the sesame seeds.  Refrigerate up to one week (or freeze).

In spite of the dates, these were not very sweet, which I think is a good thing.  Next time I think I will try to add cocoa powder and coconut, along with a bit of honey to offset the bitterness of the cocoa, because those are two of my favourite flavours.

I’m sure there are many variations possible, with dates as the base – really, the sky is the limit – so if you happen to try this, let me know what you used and how it tasted.
